10+ Delicious Ways You Should Be Eating Rhubarb

We are smack dab in the midst if rhubarb season and I could not be happier!  I simply have not been able to get enough, and from what I’ve been hearing I’m not alone.  If you have yet to experience this stalky beauty, now if you chance….don’t miss out!

Look for rhubarb at your local farmers market or in the vegetable section of your grocery store.  It’s long and stalky, similar to celery, and can vary in color from deep red to light pink to pale green.  From what I’ve been told there’s really no difference in color (although I always pick the bright red because it’s so pretty). Choose stalks that are firm and crisp, and store them in the refrigerator until you’re ready to use them.

The transformation that happens with rhubarb when it cook is nothing short of magical.  It starts out as crisp and tart (also sort of inedible, in my opinion), and becomes really tender and sweet.
