10 Easy Weeknight Meals to Get Out of Your Dinner Rut!

Every so often I go through dinner ruts where I feel like I’m making the same things all.the.time. It feels boring and I’m usually left feeling like I have zero inspiration. Despite the hundreds of recipes on this here blog, the many other blogs I read and multiple shelves of cookbooks in my apartment, I somehow can’t think of one single thing to cook for dinner.

Please tell me you’ve been there.

If you have, I don’t want you to go back there. It’s a nasty, ugly place. To keep that from happening I’ve got 10 Easy Weeknight Meals to Get You Out of Your Dinner Rut! There’s chicken, seafood, steak, meatless meal and breakfast for dinner….a little bit of everything and something for everyone.

Honey Lime Chicken Skewers – These skewers are my favorite way to fun-up chicken! Meat on a stick is just more fun. To save time, cut up the chicken and toss it in the marinade in the morning. Then, place them on the skewers and throw them on the grill after work.

Grilled Swordfish with Tomatoes & Basil – This dinner is the total package…it looks beautiful, it’s healthy and it’s such as easy weeknight meal! There’s less than 5 ingredients and it’s on the table in about 20 minutes.

Caramelized Sea Scallops with White Wine & Ribboned Asparagus – This is one of my go-to summer meals. Aside from the fact that it’s delicious and full of flavor, it’s lite, it’s quick to make (under 30 minutes!) and it doesn’t require me to turn my oven on.

Vegetable Fried Rice with Tofu – I first made this easy weeknight dinner in an effort to clean out my fridge when I was getting ready to move a few years ago. It’s since become a regular in dinner line up. There’s even a jazzier version included in the Everyday Freekeh Meals eCookbook!

Spaghetti Vongole – I became smitten with this easy weeknight meal a few summers ago when I was in culinary school. In just 30 minutes you’ll find yourself sitting in front of a lovely plate of spaghetti with clams in a smooth buttery white wine sauce.
All it takes is 30 minutes until a plate of Spaghetti Vongole is in front of you!

5-Minute Breakfast Burrito – Here’s where breakfast meets dinner in the form of a burrito. I can’t even tell you how many times I’ve gone the eggs for dinner route when I’ve had no energy to cook. I’m gonna guess I’m not alone here. Next time, instead of a sad plate of lonely scrambled eggs, grab a tortilla, some black beans, a handful of spinach and some salsa.

Vegan Spring Soba Noodle Bowls – Soba noodles are my savior when it comes to easy weeknight meals! When in doubt this is one of the places I usually turn. You can’t beat the versatility of noodle bowls. It’s a great way to use up lingering veggies from the fridge, you can eat them hot or cold and they make awesome leftovers.

Everything looks so good! Thanks for putting this list together. I’m inspired now! I think first on my “to make” list is that swordfish!
