Most weekends I have high hopes of sleeping in on Saturday and Sunday morning.  To be fair, though, I use the term “sleeping in” very loosely.  I’m a morning person, so sleeping in for me is usually anytime past 8am.  I can’t tell you the last time I slept past 9am.

Lately my internal alarm has had a tough time understanding the concept of weekends.  That’s always a treat.  Last Saturday I woke up at 5:15.  I don’t even wake up that early during the week!  By 5:25 I was wide awake, and it was pretty clear there was zero chance of going back to sleep.  By 5:30 I did what anyone in my position would do – I got up and made a batch Banana Cranberry Muffins with Brown Sugar Pecan Streusel!

Most muffin recipes instruct you to fill the muffin cup about three-quarters of the way full.  I think these recipes forget that the muffin top is the best part of the muffin.  So, I’m instructing you to fill the muffins cups all the way to the top with batter.  Because, the bigger is better when it comes to muffin tops (well, except for the muffin top that happens when your pants are too tight….that muffin top is no bueno).

Let’s not forget the streusel topping!  Sweet crumbles of chopped pecans, brown sugar and cinnamon…what’s not to love?!  Don’t be shy about loading on the streusel.  As the muffins bake and the top expands, the streusel has a way of really spreading out.

This recipe was adapted from my all-time favorite, go-to banana bread recipe (aka one of my very first blog posts, and that time I posted a recipe with zero photos).  It’s been kind of a long time since I’ve made it and this time I tasted better than I remember….but maybe that’s because I was distracted by the tart cranberries and sweet, nutty streusel topping.

Banana Cranberry Muffins with Brown Sugar Pecan Streusel

Yield: Makes 12-14 standard size muffins

Ingredients

    For the streusel topping:
  • 1/2 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 tablespoons brown sugar
  • 1/2 cup pecans, chopped
  • 4 tablespoons unsalted butter, diced
  • For the Muffins:
  • 1 1/2 sticks unsalted butter, room temperature
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 3 medium very ripe bananas, mashed
  • 2 cups fresh cranberries

Instructions

Preheat oven to 350 degrees F. Prepare muffin tins with liners.

For the Streusel Topping:

In a medium bowl, whisk together the flour, cinnamon, salt, brown sugar and pecans. Add the butter and use your hands to blend in the ingredients together until crumbly. Set aside.

For the Muffins:

In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.

In the bowl of a stand mixer (or using an electric hand mixer), cream butter and sugar until light and fluffy, 2-3 minutes. Add the eggs, one at a time, beating after each addition. With mixer on low speed, add dry ingredients in three additions, alternating with two additions of banana; mix until just combined. Fold in the cranberries.

Spoon the batter into the prepared muffin tins, filling each cup to the top. Bake for 20-24 minutes, until tops are golden and a toothpick inserted comes out clean. Remove from the oven and cool in the pan.

These are stunning!! I love a high muffin top and that streusel is to die for. I wish I was a morning person, I will get so much done and be less sleep deprived. I’m the flip side, a night person. I don’t remember the last time I went to bed before midnight and I definitely never make it up before 7.30am lol!

I’m the most inconsistent sleeper ever. It all has to do with when I go to bed. Unfortunately, the past two years, I’ve had very night-heavy jobs–so I have the mornings free (and can sometimes sleep in–but that’s still no later than 9 am for me too!), but sort of wish I was a super early morning person. I always get so much done!

These muffins look amazing Kelli! Love those muffin tops ;)

I came across this recipe because I am on cranberry kick and I had some extremely overripe bananas….ohhh my goodness, I am
heaven. The combo of these two are surprisingly delicious. I couldn’t stop eating them!
