Ahhhh, Monday morning.  I’ll share a secret with you….I hate Monday mornings.  It’s my least favorite time of the entire week.

I like to consider myself a morning person.  I wake up energized (ok, it usually takes at least one cup of coffee before the energized part happens) and ready to tackle the day…..except on Mondays.  It’s the one day that I’m not a morning person.

Mondays are just a different beast.  Maybe I’m still relaxed from the weekend.  Maybe it’s my dreaded 9am weekly group meeting at work.

Mondays call for extra coffee.  Also, extra strong coffee.

And, I’m gonna go out on a limb here, but I propose starting every week with pancakes from now on.  A giant stack of pancakes loaded with bananas and espresso (it’s Monday, after all) and surrounded by a sea of syrup.

Espresso Banana Pancakes

A couple spoonfuls of instant espresso powder gives these pancakes a nice caffeinated kick.  The flavor is subtle and far from overwhelming.

For a long time I made the sad mistake of using instant coffee instead of instant espresso.  It might have actually been half mistake and half laziness.  Turns out it’s not the same thing.  Not the same thing at all.

Instant espresso is a great thing to keep on hand for baking (I highly recommend adding this to anything chocolate!  Just, wow.), and for when you want to rev up your pancakes on Monday morning.

For these pancakes I recommend using overripe bananas.  And by overripe, I mean the less yellow, the better.  Similar to what you’d use for banana bread.  These bananas look disgusting, but they’re packed with flavor.

If you’re dreaming of light, fluffy pancakes I’m sorry to say you’re out of luck with this stack.  These Espresso Banana Pancakes are a little on the dense side thanks so the mashed bananas, but they’re not heavy.

Espresso Banana Pancakes

Espresso Banana Pancakes

Prep Time: 15 minutes

Cook Time: 20 minutes

Yield: 10-12 medium pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons instant espresso
  • 1 tablespoon brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons coconut oil, melted
  • 1 egg, beaten
  • 1 cup milk, at room temperature
  • 1 teaspoon vanilla
  • 2 ripe bananas, mashed
  • butter

Instructions

In a medium bowl, whisk together the flour, instant espresso, sugar, baking powder and salt. Set aside.

In a large bowl, mix together the coconut oil, egg, milk and vanilla. Stir in the mashed banana.

Stir the dry ingredients into the wet ingredients and mix until just combined. The batter will be a little lumpy.

Heat a large skillet of griddle over medium-high heat. Coat the surface with butter. Pour 1/3 cup batter onto the skillet. Cook until the surface bubbles and the bottom is golden brown, flip and cook the other side until golden brown. Remove from the skillet, and repeat with the remaining better.

Serve immediately with butter, maple syrup and sliced banana.

Totally agree with you on the Monday front…but if Monday means I can have these pancakes, then maybe I’m starting to like Monday.

I hate Mondays as well. I’ve been trying to convince myself that Monday’s are good for new beginnings. So far I’m unsuccessful. Let’s talk about these beautiful pancakes. I have never seen espresso in pancakes before but I can see how that would totally work. Can’t wait to try. They look super good.
