A super belated thank you for your well wishes on last weekend’s triathlon! After having this race on my to-do list for a few years I finally got around to doing the New Jersey State Olympic Triathlon.  It was such a fun day. The race was really well organized, the course was flat & fast which was a nice change, and it was a reminder that olympic distance triathlon (a .9 mile swim, 25 mile bike and 6.2 mile run) is my favorite race distance.

One of the first orders of business after getting home from the race (well, after a long, blissful nap) was restocking the fridge for the week ahead. If you guys could see our fridge and the amount of food we eat while training…it’s a little crazy.  We go from super packed fridge that looks like we’re feeding a family of six down to bare-bones-fridge-staples by the end of the week.

Sunday is sort of my unofficial “kitchen day”, and I totally love it.  It’s all about meal planning, grocery shopping and food prep for the week. Prepping dinners and snacks ahead of time is so key for us eating well during the week.  And bonus points for making weeknight dinners easier and faster to cook.   Plus, spending the day in the kitchen is a total win…Life’s Good in the Kitchen!

Speaking of which, have you guys seen the new Food Network TV show “The Kitchen”? Just as perfect as Katie Lee’s kitchen set is this super simple and perfect for summer Grilled Swordfish with Tomatoes and Basil.

There are so many things to love about this meal!  Short list of easy to get ingredients….check.  Little to no prep work…check. Healthy…check.  Quick com time…check.  Perfect use of fresh summer produce…check.  And, totally delicious…double check.

The fresh tomatoes at the farmers market have been perfect lately.  Don’t worry if you don’t have super ripe tomatoes.  They get cooked down quite a bit, so the flavor will get sweeter and more concentrated.

Grilled Swordfish with Tomatoes and Basil

Prep Time: 5 minutes

Cook Time: 20 minutes

Yield: Serves 2


  • 1 tablespoon olive oil
  • 1 pint grape tomatoes
  • 1 cloves garlic, minced
  • 1/2 cup fresh basil, chopped
  • 1 lb. swordfish steak
  • salt
  • fresh ground pepper


Heat the grill on medium-high heat.

Heat the olive oil in a large saute pan over medium heat. Add the tomatoes and season with a pinch of salt and pepper. Cook the tomatoes until they pop and become soft, about 20 minutes. Add the garlic and cook for a minute more. Remove the pan from the heat and stir in the basil.

Meanwhile, season each side of the fish with salt and pepper. Place the swordfish on the grill, cook for 5 minutes, then use tongs to flip the fish and cook for 5 minutes on the other side.

Remove the swordfish from the grill. Divide between plates and top with the tomato and basil mixture.


If you don't have a grill you can use a grill pan or cook the fish in the broiler.

Congrats on crossing off a MAJOR item—well major as far as I am concerned—with the successful completion of the triathlon! Swordfish is not every day available in my area, but I am sure halibut would be the same kind of firm white fish. I have fresh basil in my herb garden and I love opportunities to use it. I am fond of that flavor.
