Just in time for Mother’s Day, I’m sharing one of my favorite spring brunch items – Roasted Asparagus with Poached Eggs & Shaved Parmesan.

Do something nice for your mom this weekend…you should buy her a card, maybe send a lovely bouquet of flowers, make her brunch or a big batch of cookies.  Do something to let her know how special she is!

You could top pretty much anything with a poached egg and I’d be a very happy camper!

Making poached eggs is both extremely easy and tricky at the same time.  Such a contradiction, I know.  But, if you’ve ever made poached eggs, you know what I’m talking about.  Even if you make the world’s best poached eggs, there was a time when you made disasterous poached eggs one after another, trying to get it right.

There are a bunch of methods you can use to poach eggs.   The method I use here is simply my preference, and the one that’s worked best for me over time.  I’m sure there will plenty of you that do something different, which is totally ok.  Stick with it.  I’d love to hear what works best for you!

While this makes a fantastic brunch, I also love asparagus with poached eggs as lunch or a simple dinner, and it makes a great appetizer for a small group.

You know, I dont think I’ve ever actually had a poached egg :) This recipe sounds super tasty though, might have to change that!

Mmm, love this! Reminded me of the time I went through a phase, right after I mastered poached eggs, of eating asparagus and poached eggs on toast every.single.day. :) Might have to bring that back!
