Roasted Brussels Sprouts and Apple Grilled Cheese

Good lordy this week has been long.  I suppose it didn’t help that everyday I woke up thinking it was a day ahead of the day we were actually on.  You’d think that by Tuesday, Wednesday, at the absolute latest that I would have caught on….sadly, no.

Here’s what got me through the week….the arrival of my new camera lens (!!!), the arrival of Dove peppermint bark candies and knowing that today I finally get the share the greatest grilled cheese sandwich ever with you!

You can go ahead and use any kind of bread you fancy for this sandwich, but I highly recommend sourdough.  I mean, you really can’t beat a good loaf of sourdough bread!

I’m getting a little ahead of myself.  Before we can even think about assembling this masterpiece, we need to take care of our Brussels sprouts.  And by take care of them, I mean we need to shred those suckers up and roast them to brittle, crispy perfection.  Oh, and don’t forget to season them with salt and pepper.  You’re going to be in Brussels sprouts heaven!

One thing to note…before going in the oven it might look like you have a lot of  Brussels sprouts.  Like, maybe too many.  It’s not too many (plus, are too many Brussels sprouts, actually a problem?!)!  The sprouts are going to cook down a lot.


Ok, so you roasted your Brussels sprouts.  Hopefully you didn’t eat all those crispy shreds off the baking sheet…..oh wait, is that just me who does that?

Let’s make some grilled cheese sandwiches!

It goes a little something like this….slice of sourdough – layer of shredded Gouda – layer of crispy sprouts – layer of tart, crisp apple – another layer of shredded Gouda – and another slice of sourdough to top it off!


Grilled cheese is best made over low-steady heat.  Jack that flame up and your bread cooks too fast (it burns) and the cheese doesn’t melt so well.

I like shredding the cheese when I make grilled cheese…it melts more evenly.  Also, I can’t cut even slices of cheese to save my life.

My least favorite part of grilled cheese making is flipping the sandwich.  I hold my breath and hope for the best every.singl.time.  You wanna know what makes this part easier….using a fish spatula!

Roasted Brussels Sprouts and Apple Grilled Cheese

Yield: Serves 2


  • 8-10 Brussels sprouts, ends removed, halved & shredded
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • fresh ground pepper
  • 1 granny smith apple, peeled and julienned
  • 1 1/2 cups Gouda cheese, shredded
  • 4 slices sourdough bread
  • butter


Preheat the oven to 375 degrees F.

In a medium bowl tossed the shredded Brussels sprouts with olive oil, salt and pepper. Spread in an even layer across a large baking sheet. Cook for 15 minutes, stirring occasionally, until Brussels sprouts are crisp and golden.

Butter one side of each slice of bread. Place a slice of bread butter-side down in a large non-stick skillet, over low-medium heat. Top the bread with a layer of shredded cheese, add a layer of shredded Brussels sprouts, a layer of julienned apple and another layer of shredded cheese. Top with the remaining slice of break.

Cook until the bottom piece of bread is golden, about 5 minutes. Use a spatula (preferable a fish spatula) to carefully flip the sandwich over. Cook until the other slice of bread is golden brown, about 5 minutes.

This sandwich pretty much has the power to rock your world! I actually rented this lens a few months ago and loved it, it’s really versatile and great for travel. I used it for a lot of food photos over the weekend….so in love!
