#IceCreamWeek: Salted Honey Ice Cream

Have I ever told you guys that ice cream is my my favorite food in the entire world?  It is!  Number one, favorite food.  I love it, and cannot get enough.  Whenever I share this little factoid, what happens next is inevitable….I get asked about my favorite flavor.  I really hate this question.  I simply do not have an answer.  I could easily rattle off my top ten favorites, no problem.  With some thought I could tell you my top five.  And, gun to my head, maybe I could narrow it down to top three, maybe.

Salted Honey Ice Cream

So, choosing just three ice creams to share with you this week, it was tough business!  I started the week with fresh Backyard Mint Ice Cream.  Then, my chocoholic side came out to play with Dark Chocolate Cookies & Cream Ice Cream.  Which brings us to the final installment of #IceCreamWeek.

I briefly thought about going the fruity route, but instead opted to go on a fragrant and floral tangent with sweet clover honey.  Oh, and then I stepped it up with a pinch of flaky sea salt.  Sweet and salty is one of my favorite flavor combos.

Let’s talk about the texture of this ice cream.  It’s sort of not at all what I was expecting…..and for that I absolutely love it.  Earlier this summer I made a few batches of ice cream that came out of the freezer rock hard.  Big dislike.  This Salted Honey Ice Cream is quite the opposite.  It’s super creamy, smooth and soft….just the way I like it.  It does seem to melt kind of fast, so grab a spoon and dig in!

Salted Honey Ice Cream


  • 8 tablespoons honey
  • 1/2 teaspoon sea salt
  • 1 cup whole milk
  • 2 tablespoon sugar
  • 4 large egg yolks
  • 1 cup heavy cream


In a large (preferably metal) bowl, prepare an ice bath by adding ice cubes and a little bit of water. Place another, slightly smaller, bowl inside the ice bath. Set aside.

In a small saucepan, heat honey over medium-low heat. Add the salt, mixing until it dissolves. Remove from the heat and set aside.

In a medium saucepan, add milk and sugar. Cook over medium heat, stirring occasionally stir until the sugar dissolves. Once it reaches a simmer, remove from the heat.

In a medium mixing bowl, beat the egg yolks. Temper the eggs by whisking about a cup of the warm milk into the egg yolks. Then, slowly whisk the eggs back into the saucepan with the remaining milk. Cook over medium-low heat, stirring constantly with a wooden spoon, until the mixture has thickened enough to coat the back of the spoon. If you're using a thermometer, cook to 170 to 175 degrees F.

Pour the mixture through a fine mesh strainer and into the bowl over the ice bath. If the honey has cooled, quickly rewarm it and add it to the egg yolk mixture, mixing thoroughly. Stir in the heavy cream. Once the mixture has cooled to room temperature, Wrap the bowl in plastic and transfer it to the fridge for 4-5 hours, or overnight, until very cold.

Churn the mixture into the bowl of your ice cream maker, according to your ice cream maker’s instructions. Transfer to a freezer-safe container and freeze overnight.

I am a huge fan of salty and sweet, so I can just imagine how much I’d love a bowl of this ice cream, especially made with local orange blossom honey. MMMMM!

I think for me, choosing a favorite ice cream would be akin to choosing a favorite child…you just can’t do it!
