Have I ever told you about how much I love avocados?! Love them like crazy! Love, love, love, love!! And strawberries, well, they make me feel the exact same way! I’m absolutely smitten with these deep red berries. Eating an entire basket in one sitting….piece of cake. So, clearly it made sense to throw them together in the blender (along with a few other goodies) for a Strawberry Avocado Smoothie!
But, before we talk more about the smoothie that’s currently rocking my mornings, I want to tell you a little bit about what’s rocking my week….a trail running trip around Panama! I have a feeling most people probably wouldn’t think of this as a vacation, but it’s my kind of vacation. My week is more scheduled than when I’m home and at work, it’s jam packed with action & adventure and I’m loving every single second of it!! I’m spending this week with a super-fun group of runners; we’re starting every day with a trail race (except for the day we hike up a volcano), as we travel across Panama, making our way from Panama City to the island region of Bocas Del Toro. In between running & traveling, we’ll also fit in some hiking, waterfall repelling, snorkeling and we’ll hopefully sneack in a few minutes of beach time at the end of the week. I did a similar trip a couple years ago in Ecuador and it was an absolute blast, so I can’t wait to see all the fun this trip will bring! I’ll have a full recap and LOTS of photos to share with you when I get back to New York!
Ok, back to Strawberry Avocado Smoothies! This drink has really excited for summer – it’s cool, refreshing and no doubt it’s going to be especially delicious after my morning runs and bike rides when the temperatures start rising. Heck, even if the temperatures aren’t on the rise yet, this blend of strawberries, avocado and spinach, will start your day on the right foot.
