Is it possible to make it through January and not think about citrus?  Orange mesh bags filled with clementines, navels and blood oranges, and large ruby red grapefruits – they’re everywhere right now.  Even when the refrigerator is stocked, I have a hard time leaving the grocery store with adding something more to my citrus bounty (I’m currently using the excuse that I need the extra vitamin C to keep up my continued success in warding off the flu).

Lately I’ve been especially smitten with grapefruit.  Softball-size, bright pink, extra juicy, tart and sweet grapefruit.  It’s been so long, I can’t tell you the last time I put sugar on my grapefruit.  It’s been yeeaaars.  While this great winter fruit can be tart or even a little bitter, it’s still plenty sweet for my taste.

Today is a different (and delicious) story though!  Sprinkle a spoonful of vanilla bean laced sugar over your grapefruit, pop it under the broiler, and in just a few minutes you’ll have a perfect winter treat.

Vanilla Sugar Broiled Grapefruit

Yield: Serves 2

Ingredients

  • 1 large pink grapefruit, halved
  • 1/2 vanilla bean, seeds scraped
  • 2 tablespoons granulated sugar

Instructions

Heat oven with the broiler on low.

Combine vanilla bean seeds and sugar in a small bowl. Use your fingers to blend the seeds with the sugar. Set aside.

Use a paring knife to section the grapefruit segments. Arrange the grapefruit, cut side up, on a baking sheet. Sprinkle each half evenly with the vanilla sugar.

Broil 4-6 minutes, until the sugar begins to bubble.

Remove from the oven and serve immediately.
