Chipotle Black Bean Freekeh Sliders with Avocado Lime Crema
After I got home from Panama (I’m working on a photo-filled recap for you…stay tuned!), there were two things I was really looking forward to – getting back in the kitchen and getting back to Central Park to start logging some solid mileage.
That first part was a piece of cake, but the second part of that plan didn’t quite go as smooth as I hoped. A couple weeks before I left for Panama my hip flexor started bothering me. Nothing terrible, just a tiny, little twinge. I kept running, it got mildly worse. Then, because I’m stubborn, I pushed through a long run that I shouldn’t have even started. You probably won’t be shocked to hear that that tiny twinge turned into a constant ache (aka – what happens when you don’t listen to your body).
The week leading up to Panama my running shoes stayed in the closet, I stayed off my feet as much as possible, I iced my hip multiple times a day and took regular doses of anti-inflammatories. By the time the trip rolled around I felt a lot better. Not 100%, but strong enough to run.
While I put in a solid effort last week, I made sure not to push the envelope. But, by our last race in Panama my hip flexor twinge was back. I tried an easy run when I got back to New York, but my hip wasn’t having it so I threw in the towel after a mile or so.
While this doesn’t bode well for my Brooklyn Half training, the race is still seven weeks out and a lot can happen between now and then. Instead of feeling sorry for myself and sitting at home, drowning my sorrows in Lemon Artichoke Dip, I’m making the best of the situation and spending a lot more time in the pool….then refueling with Lemon Artichoke Dip. There’s no way the dip was leaving that equation!
Is it just me, or does it seem like dips get a bad rap? Sure there are plenty that fit the bill, but there are many more that are pretty healthy. Whether it’s hummus, tzatziki, or white bean spread, you’ll find some variation of these dips in my refrigerator at all times. Right now, I’m loving this lightened-up version of creamy Lemon Artichoke Dip. It’s light, fresh, and perfect for spring!
