Dark Chocolate Cookies and Cream Ice Cream

Let’s just cut to the chase, ok.  This is one of the best, maybe the absolute best, thing to ever come out of my ice cream maker.  It’s like, whoa nelly, stop the show, hold onto the reins because it’s about to get crazy, kind of good.

It’s kinda funny how much I truly adore this ice cream because while I love ice cream and I love chocolate, chocolate ice cream doesn’t usually do it for me.  I usually feel kind of meh about it, opting for a giant scoop of vanilla bean, instead.  But this, my friends.  This ice cream, it’s a totally different story!

Dark Chocolate Cookies and Cream Ice Cream

This ice cream was born from a trip to the grocery store on an empty stomach, and with no list in hand.  It was all over the second I spotted the package of Oreos on the shelf.  I don’t remember what I went to the store for that day, but I’m pretty certain all that came home with me was the makings of Dark Chocolate Cookies and Cream Ice Cream.

I felt certain the cookies were going to be the star of this ice cream show, but it is hands down the rich chocolate ice cream that deserves the buzz.  I suppose I shouldn’t have been surprised though since the base of this ice cream is essentially a pudding.  Yes, pudding.  A luxurious, velvety smooth mixture of dark chocolate, milk and cream that gets chilled and churned into the most outstanding chocolate ice cream imaginable.

#IceCreamWeek: Dark Chocolate Cookies and Cream Ice Cream

Yield: Makes approximately 1 quart

Ingredients

  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 3 tablespoons cornstarch
  • 2 1/2 cups whole milk
  • 3/4 cup heavy cream
  • 3/4 cup best quality dark chocolate
  • 12-14 Oreo cookies (approx. 1 sleeve), crushed

Instructions

In a smal bowl, whisk together sugar, cocoa powder, salt and cornstarch. Set aside.

In a medium saucepan, warm the milk over medium heat. Whisk in the sugar mixture, stirring to dissolve any lumps. Heat milk until it begins to boil, and thicken to a pudding-like consistency.

Remove from heat. Pour through a fine mesh strainer into a medium bowl. Add in the cream and chocolate, and stir until fully melted.

Chill the mixture until completely cool, at least a few hours, up to overnight.

Pour the chilled mixture into your ice cream maker and churn according to the manufacturer's instructions. During the last few minutes of churning add in the crushed Oreos.

Transfer to a freezer safe container, and store in the freezer for at least 4 hours before serving.

Awesome! I looove chocolate cookies and cream ice cream. And oreos, all the time. Apparently, my friend’s Dad was credited as the first to come up with the idea for cookies and cream–and the first to mix in candy and whatnot. Pretty cool!

Oh heeeey ice cream twin! I love your version! I’ve never tried an ice cream base with cornstarch but I’ve heard it’s amazingly smooth and creamy. I’m definitely pinning your version to try!

I’ve made a few different egg-free ice cream bases lately (using cornstarch, instead), and I have to say, I think it’s won me over. The other upside…I don’t have a million extra egg whites hanging around in my fridge :)
