I was just about to tell you how close I was to reaching my breaking point with winter, but then a snowstorm blew through New York, covering the city in a beautiful blanket of white powder. And just like that, I had a change of heart. How could I hate something that made Central Park look like this?!
A couple weeks ago I was on Say Yes to Hoboken, sharing one of my favorite winter comfort foods – a hearty mixture of tomato braised butter beans with kale and mushrooms over creamy parmesan and thyme polenta. Yesterday, after strolling through the park and playing in the snow, I came home ready to warm up with something hearty & savory, and this is the first thing that came to mind.
This dish isn’t your stereotypical comfort food. It’s not fried or greasy or loaded with cheese. Just the opposite – it’s vegetarian, gluten free and loaded with fresh veggies. The mushrooms and beans make this feel meaty and hearty, without being heavy. I can assure you that it will leave you with a wonderful warm, cozy feeling throughout your body.
And with just 45 minutes of prep and cooking, this dish is the perfect addition to your weeknight dinner line up.
Don’t let winter pass you by without warming up with a bowl of Tomato Braised Butter Beans. Go check out Say Yes to Hoboken and get my recipe for Tomato Braised Butter Beans with Kale & Mushrooms.
