Vegan Spring Soba Noodle Bowl

Today I’m giving you a tiny peek into my everyday.

Coffee.  It must happen first thing in the morning.  Before I can even think about opening my laptop, turning on the news, putting in my contacts, I must have at least one sip of good, strong coffee.

I start everyday with green juice or a smoothie.  I usually rotate days for the simple reason that it gives me more time to clean the juice machine or the blender, depending on the day.  For the past few weeks I’ve been crushing on this smoothie + a handful of spinach and sometime some frozen berries.

I almost always carry a book with me.  One because I love to read (in middle school, while other kids were getting in trouble for passing notes and talking in class, I got in trouble for sneaking in some extra reading time), and since I live in NYC all my commuting time is spent on the subway or bus.  I also usually read more than one book at a time.

It’s a rare occasion that I’m awake past 11pm.  I don’t know what to say, I’m just not a night person.

When in doubt, my favorite go-to dinner is some variation of a soba noodle bowl.  It’s simple, quick to whip together, is equally fantastic served hot or cold, and there are sooooo many possible variations.  Also, soba noodle bowls make the best leftovers!

Thanks to some great seasonal produce (I’m looking at you radishes and fava beans) this Spring Soba Noodle Bowl has been showing up on the dinner table a lot lately.  This vegan noodle bowl is topped with sliced radishes, fava beans (although if you’re not up for shelling them, edamame makes a great substitution), scallions and a simple sesame-ginger dressing.

I really don’t want to be a night person–but based on my sleeping patterns the last few days, I guess I would have to qualify myself as one (2 am–NOT GOOD!).

I love soba noodle bowls! They are so refreshing and make the perfect lunches for work. Definitely will be trying your version!

Hmmm, I think the last time I saw 2am was about a year ago when I went to a wedding.

No kidding, that smoothie has totally changed my mornings :) Sadly, I haven’t made it to Nourish yet….pretty sure when I get there I’ll want to eat all the things.

Sometimes I don’t feel like a “real” adult because I rarely drink coffee. I’ll make a cup on the weekends, but that’s about it.

This soba noodle bowl sounds so delicious! Love the veggies in it. Soba noodles are great because they’re yummy warm or cold. The leftovers make a great lunch.

I try to be mature and have a regular bedtime. But mind and body don’t always work in tandem with what is ‘regular’. However I love soup—-well except for canned soup. Soba noodles rock.

i am totally a morning person…but I still need my coffee before I can do ANYTHING. I’ve been loving quick and easy dinners lately, and this soba noodle bowl totally fits the bill. Spring veggies are so gorgeous!
