Pomegranate Glazed Skirt Steak Tacos with Pickled Red Cabbage and Spicy Guacamole

Most times when L and I order take out, or go out for a quick dinner in our neighborhood, the decision about where to go usually starts something like this…

L: What are you in the mood for?

Me: Hmm, maybe Thai or Indian.  Sushi sounds good!  I could do Italian.  Ohhh, maybe that Persian restaurant we ordered from that time.  Well, actually, I could pretty much go for anything expect Mexican.

Anything except Mexican.  I know, I don’t really get it either.  I love Mexican food, but maybe I’m just not crazy about the places in our neighborhood.  I don’t know.

Well, wouldn’t you know it, the one weekend that L was out of town recently, my urge for Mexican food showed up.  Unfortunate timing for him.  Lucky for my mom though, who happened to be visiting for the day.

That was the day I discovered Pomegranate Glazed Skirt Steak Tacos with Picked Red Cabbage and Spicy Guacamole.

These tacos.  Oh my heavens, these tacos!

I was probably only two bites into my first taco when I knew I had to recreate these at home with a few twists of my own.  I was smitten.  It was love at first bite.  I’m pretty sure spent the rest of the weekend talking about these tacos to anyone and everyone that would listen…..well, they probably stopped listening but I was still talking.  Because, really, these tacos.

The vibrant flavor combo is truly what makes these tacos awesome!  The sweet, spicy, tangy & savory, that all hit you at totally different times of each bite.

I don’t like super spicy food, but for this recipe I add a little more heat to the guacamole than I normally would.  I don’t want the guac to get lost in the shuffle of flavors happening in one little tortilla.  The slightly spicier guac is the perfect complement to the tangy pickled red cabbage , sweet pomegranate seeds  and cool cilantro  leaves.

Let’s talk about actually making these bad boys!

These tacos aren’t the kind of tacos that you can just throw together at the last minute.  But, as we’ve all been told, good things to come those who wait….good things, like tacos!

There’s some prep work involved, but it’s nothing too crazy and absolutely worth it.

For the pickled red cabbage, you can let soak for 2-3 hours, but for maximum flavor I recommend soaking it overnight.  I also recommend slicing it a little thinner than I did.

When marinating your steak keep one thing in mind, more marinating time = more flavor.  I recommend marinating the meat for about 24 hours.

Pomegranate Glazed Skirt Steak Tacos with Pickled Red Cabbage and Spicy Guacamole

Yield: Makes 6-8 tacos

Ingredients

  • one 1/2-3/4 lb. skirt steak
  • For the marinade:
  • 1/2 cup pomegranate juice
  • 3 cloves garlic, minced
  • 3 tablespoons chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • For the pickled cabbage:
  • 1/4 head of red cabbage, sliced thin
  • 2 cups white vinegar
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 1/4 teaspoon chili flakes
  • For the guacamole:
  • 1 avocado
  • 2 tablespoons fresh lime juice
  • 1 tablespoons fresh cilantro
  • 1/2 teaspoon salt
  • pinch fresh ground pepper
  • 1/2 - 1 teaspoon cayenne pepper
  • 6-8 corn tortillas
  • Pomegranate seeds, for garnish
  • Chopped fresh cilantro, for garnish

Instructions

For the marinade:

Combine the pomegranate juice, garlic, chili powder, cumin, cayenne pepper and black pepper in a long, shallow baking dish (or large Ziploc bag), and mix together. Add the skirt steak.

Marinade, covered in the refrigerator, for at least 3-4 hours (preferably 24 hours), flipping the meat several times.

For the pickled red cabbage:

Remove the stem. Shred, or slice the cabbage very thin. Set aside in a large bowl.

In a small saucepan, combine the vinegar, sugar, salt and chili flakes, and bring to a boil. Pour the hot pickling liquid over the cabbage.

Let the cabbage soak for at least 2-3 hours (preferably 24 hours for maximum flavor).

Drain and discard the pickling liquid.

For the guacamole:

Cut the avocado in half, remove & discard the pit, scoop out the flesh into a small bowl. Use a fork to mash the avocado to the desired consistency. Add the lime juice, cilantro, salt, black pepper and cayenne pepper, and mix to combine.

Heat a cast iron pan (or grill pan) over medium to medium-high heat. Add the steak, pressing down gently to help get a good sear. Cook for 3 minutes, flip and cook for another 3 minutes on the other side, for medium rare (my preferred doneness). Cook for another minute or two longer on each side for more done meat. Rest the meat for 5 minutes.

To assemble the tacos:

Heat the tortillas to soften.

Spread a spoonful of guacamole over the bottom of the tortilla. Top with pickled red cabbage and a few slices of skirt steak. Garnish with pomegranate seeds and chopped fresh cilantro.

It’s like I’m having the best dream EVER – these tacos are absolutely perfect!! Pickled cabbage is one of my favorite foods ever and I’ve never made it, which is going to change this weekend. Ohhhh …. pomegranate glaze?!? Sounds amazing!! And I’m totally with you on marinating – the longer the better!

We can never decide where we want to go, either! We go through all of the options, but then we DO pick Mexican! It’s our fave – and I know these will fit in just perfectly when my littlest requests Taco Tuesday at home! :)

My stomach is literally growling right now at the thoughts of guacamole and this pomegranate glaze. I almost took a bite of my computer screen!
